O-Ku Operations
Kimball Brienza has spent his career in the culinary and hospitality industry focused on creating memorable experiences for each guest that walks through the door. Becoming a part of the Indigo Road at its inception as a server, he has since been integral in taking O-Ku from a single concept to a multi-unit brand garnering many accolades along the way, and he remains committed to the expansion of O-Ku.
In 2019, Kimball helped bring the O-Ku experience to a fast-casual concept with the opening of Sukoshi in Atlanta. His culinary knowledge combined with his interpersonal and relationship building skills enables him to take a holistic approach to managing the restaurants while acting as a culture curator. Whether helping with food preparation in the kitchen or serving bites to the community through outreach events, Kimball is a hands-on leader who sets a positive example.
Kimball’s strength lies in sharing his knowledge with team members to help support their goals for establishing a rewarding career in the culinary and hospitality industry. His career in the culinary industry started in high school when he completed a two-year culinary degree in 2000 from the OAOC technical and career education school in upstate New York.
