For Matt Weinstein, food has always been about connection; to place, to people, and to the stories behind every ingredient. Based in Highlands, North Carolina, Matt oversees the culinary programs across The Indigo Road’s lodging locations, guiding a diverse collection of chefs and restaurants that span from seafood and Italian to American and steakhouse fare.
Matt’s journey started humbly in Virginia, washing dishes and bussing tables before finding his rhythm behind the line at seventeen. After graduating from the Culinary Institute of America in Hyde Park, he cooked his way through kitchens across Virginia, D.C., Maryland, Georgia, and North Carolina, each stop shaping his craft and his philosophy of cooking with care and intention.
He joined The Indigo Road family at Oak Steakhouse Atlanta before heading to the mountains to lead Oak Steakhouse at Skyline Lodge in Highlands, where his seasonal, ingredient-driven approach earned local and national recognition. Today, he brings that same creativity and mentorship to his role as Culinary Director of Lodging, helping each property tell its story through food.
When he’s not in the kitchen or on the road, you’ll likely find Matt exploring with his wife, Markie (who’s also a chef), or cruising the Blue Ridge in his ’87 Buick Regal T-Type. He’s a lover of all things classic, cars, vinyl, cassette tapes, and believes that the best meals, like the best songs, stand the test of time.
